Nasi Lemak

Today is public holiday in Selangor. I cooked nasi lemak for the family to cater for the whole day need. Since hubby is not around, I have to go out to do errands and for sure cannot be at home on time to prepare for each meals. Nasi lemak is the best choice to cover the 3 meal need (breakfast, lunch and dinner).

My nasi lemak went along with my infamous sambal sotong together with egg, cucumber, peanuts and fried anchovy.

Basic Butter Cake

Suddenly, I craved for Butter Cake. It was yours truly, NOT the kids. :-D

I have tried many basic butter cake recipes before and the following is the best to fulfill my desire. The recipe was copied from The Star newspaper under Amy Beh's column many years ago (can't remember exactly when). I feel so lucky to have the copy of the recipe as to me, this is the best Butter Cake ever.

Basic Butter Cake

looks yummy!!!

Here is the recipe:
Basic Butter Cake

Ingredients
250gm butter
200gm castor sugar
4 eggs
1 tsp vanilla essence
200gm self raising flour, sifted with ½ tsp salt
4 tbsp fresh UHT milk

Method
•	Grease and line a 20cm cake tin with greaseproof paper. Preheat oven to 170C
•	Cream butter and sugar until light and creamy.
•	Add eggs one at a time, beating well after each addition until mixture is light and fluffy.
•	Add vanilla essence.
•	Fold in sifted flour gradually to mix.
•	Finally stir in milk. Mix until well combined.
•	Turn out mixture into prepared tin.
•	Level out mixture at the sides but allow a shallow well in the center. This is to enable the cake to level up evenly during baking.
•	Bake in the preheated oven for 55-60 minutes or until cooked through when tested with a skewer.

WARNING!!! It is non-food entry. Langkawi Trip 21 Nov - 24 Nov.

It has been a loooooooooong time since I updated this page. So many things happened to my life. I've been very busy lately... started with hubby accepted new job offer and potential for him to be relocated, 2007 Hari Raya, taking care of the kids by myself since hubby is always on the move, kids' exams, and the recent Langkawi holiday trip without the company of my hubby. His fully paid air ticket has to be forfeited since it was bought on promotional price. :-( Good business strategy by Air Asia ;-)

Here is the story of our long planned Langkawi trip.

We left home early in the morning with MPV cab chartered from Sunlight taxi. Taxi fare is RM90. Journey to LCCT from Shah Alam took merely 1 hr where I could have reached LCCT by 1/2hr if I were to drive there myself ;-)

We had our breakfast at LCCT's Mc Donald's and proceeded to check-in counter after we were done with our breakfast.

Arrived very early at the designated gate. Malaysian are kiasu too when it comes to get the best seat available on the airplane. We boarded the airplane and succeessfully secured good seats after queuing as the 2nd family in the line. ha ha ha...

I would say that Air Asia's Airbus A320 is more comfortable than the previous Boeing 737 aircraft. Seats are more spacious and more room for legs. It's incomparable to MH's flight but, considering a low cost flight, to my standard it worth the money. Kids were complaining on no in-flight entertainment system. What do you expect on an hour air plane ride compared to long haul journey,

Landed safely at Langkawi International airport as per scheduled arrival time. I proceeded to the car rental counter as soon as I entered the terminal building. I went counter hopping for best bargain car rental package. Successfully secured a deal for the latest model Nissan Sentra for RM75/day. Good bargain, huh. And I'm very proud of myself. hahahaha

We headed to Kuah town for lunch and sight seeing followed by window shopping. There we had our first meal of Pak Hj Ya Nasi Ayam. The kids enjoyed the Nasi Ayam very much.

Arrived at the hotel and checked in at around 3pm. It was the beginning of swimming pool and beach treat for the kids for the rest of the 4 day stay.

Did not do much on the 2nd day. Swimming pool and beach activities. Lunch at Kuah town at Pak Hj Ya Nasi Ayam AGAIN !

The 3rd day started with roti canai breakfast at Harbour Park followed by light shopping trip at the Zon Duty Free out of Under Water World. Visited Langkawi Underwater World. Entrance fee is RM28 for adult and RM18 for children. Expensive for me considering that the underwater tunnel was closed for renovation and the 3D theater was viewed with 2D. I felt that the fee shall be lowered due to these incoveniences. Kids did enjoyed themselves but did compared the joy that they had when we visited Sea World in San Antonio. NO Shamu, NO Dolphin feeding at Langkawi. Of course !! Macam langit dengan bumi.

The rest of the 3rd day was spent at swimming pool and beach again......

The 4th day was our last day in Langkawi. We had breakfast the hotel followed by swimming pool and beach experience again. Checked-out at 12:15pm from the hotel. We planned to visit Telaga Tujuh as it was located very near to the hotel. Parked the car at the parking lot and paid RM2 for the parking fee. Approached the shop assistant at one of the stalls and we were informed that it would take ~25 minute walk to reach the "well" and none of us were prepared for such trip. We went back to the car and headed down to Kuah town for another adventure. There goes my RM2 parking fee. uwaaahhhh

Stopped by at gamat factory named warisan Salju Enterprise. We were taken to the place where the gamat ointment was cooked and explained by the 'owner' on the processing. It was a short educational trip for the kids :-) We then headed to Kuah town for lunch and guess what. Nothing else than Pak Hj Ya Nasi Ayam. This was our 3rd and last lunch meal at the same restaurant for the trip. Pak Hj Ya sure be happy if he would have known this. ha ha ha

Spent time for some duty free chocolate shopping and key chains shopping for my collegues before heading to airport to catch the flight home.

Safely landed at LCCT on the ETA. Stopped by to watch airplanes landing at the airport runaway for about 1/2 hour before heading back to Shah Alam....

It was a wonderful trip altogether but we really miss the presence of my husband. The kids wanted to go back again but, with the father. Insya Allah.....

Sunset at Burau Bay, Langkawi Island

Sembang-sembang:Nim: Itulah pasal. Aku pun x faham apsal tak habis2 buat renovation. Rasa mcm frust gak sebab bayar mahal2, tapi tak ada apa benda yang di tengok sangat. Aku pun tak rasa Langkawi ni syorga untuk makan dan shopping kecuali shopping cekelat. Tapi, pantai kat tempat yg aku tinggal tu OK gak. Secluded. Tak ada ramai orang. Pantai tempat lain aku tak tahu lah pulak macamana sebab tak penah tinggal kat tempat lain lagi. ;-)

6 Ramadhan 1428

Today is the 6th day of Ramadhan. I reached home quite late due to a lengthy conference call that I have with my counterparts in Munich. My family finally settled down with a simple rice and lauk kampung for iftar. I cooked sayur labu masak lemak, sambal tumis ikan bilis, udang goreng tepung, and ikan tongkol goreng. My husband bought murtabak and popiah basah (my favorite) from pasar ramadhan.

4 Ramadhan 1428

Today is the 4th day of Ramadhan. Not much activities. The usual wet market trip and another round of grocery shopping at Tesco. Nafeess proposed Chicken Rice for iftar and agreed by the other siblings. I made chicken rice and proceed with yesterday's plan of Steamed Coconut Blossom for the dessert.

Did not manage to snap photo of my Chicken Rice. Therefore, no story about if for now. I would like to share on the Steamed Coconut Blossom from MamaFaMi's FP. Enjoy!!!

Ingredients A :
3 eggs ~ from the fridge
220g castor sugar
275g Softasilk (I used cake flour)
3 teaspoons baking powder
1 teaspoon ovalette
140g coconut cream (I used fresh milk because I don't have any coconut cream)

For filling :
50g castor sugar
125g palm sugar
1 teaspoon cornflour mixed with 50g water
3 pandan leaves
225g fresh grated coconut

** For the filling, I didn't actually follow the amount given. I simply put in however much that I pleased. I add a bit of brown sugar for color as I used just a bit of palm sugar (**limited stock**).

Method :
1. For the filling : Mix all the ingredients in a pot and cook till dried.
2. Mix all the A ingredients and beat with high speed till thick and creamy.
3. Divide into a few bowls and put in the coloring.
4. Place the papercups in the muffin tray and put a bit of mixture in the cups. Then put a bit of filling and cover it with the remaining mixture.
5. Steam for 15 minutes.
* Thanks Sis Rossya...
Pea: Thanks MamaFaMi

3 Ramadhan 1428

Today is the 3rd day of Ramadhan and today is Saturday. Since I was down with cold, this is the best time to have a good rest.

But, as always...things never went as smooth as planned. I spent the whole morning doing errands with the final agenda for the morning session was doing grocery shopping at Giant. There were so many people at Giant today. I finally reached home at 2pm. I took afernoon nap which lasted almost 2 hrs and felt better after that. I planned to make Steamed Coconut Blossom for ifter dessert. Recipe was taken from MamaFaMi FP. Unfortunately, hubby took all the children for Pasar Ramadhan shopping. They took home 3 different types of drink with 3 different types of kuih. MasyaAllah!!

I cancelled my dessert plan but continue with iftar meal which are bubur lambuk and spaghetti bolognese.

Spaghetti Bolognese
bahan:
1 biji tomato - potong dadu kecik
1 biji bawang besar - potong dadu
cendawan tiram - siat2, potong dadu (lebih kurang)
1/2 kilo minched meat
1 tin kecik tomato puree brand duchef
tomato sos ikut sesedap rasa manis masam nya (tak tahu banyak mana)
3 ulas bawang putih
daun italian herbs (mc cormick)
1 helai bay leaves
sedikit oregano
rempah spaghetti bolognese maggi (ikut mood dan availaibility, kalau tak ada pun tak apa)
sedikit minyak untuk menumis

Cara:
1. panas kan minyak, masukkan bawang putih yg telah di ketuk2
2. bila naik bau, masukkan minched meat. masak hingga rata dan airnya kering
3. masukkan rempah spaghetti (kalau ada lah). kacau rata
4. masukkan tomato biji, tomato puree, tomato sos. kacau sebati, masukkan garam, seimbangkan rasa.
5. masukkan cendawan tiram, masukkan bawang, herba2 dan yang lain2.
6. tambahkan air kalau kuah terlalu pekat.....

* Kalau nak lebih masam, lebihkan tomato biji. kalau malas potong dadu, belah 8 pun boleh, tapi make sure bila dah masak, tomato tu dah hancur (sebati) dalam kuah tu.

Bubur Lambuk
Bubur Lambuk
Bahan:
1 pot beras
250gm daging - potong kecil2
air secukupnya (untuk mengembangkan beras - kepekatan bubur ikut selera masing2)
250gm santan
100gm kacang tanah - rendam 4 jam
50gm kacang dhal - rendam 4 jam
rempah tumis (kulit kayu manis, buah pelaga, bunga lawang, bunga cengkih)
daun sup
daun bawang
bawang goreng
1/2 kiub tulang lembu (optional)
garam secukupnya

Cara2:
1. Rebus beras, kacang tanah dan daging dlm pressure cooker selama ~20 min
2. Masukkan kacang dhal, santan, kiub tulang lembu dan garam. Kacau sebati. Tambahkan air jika perlu. Sesuaikan rasa garam.
